    This programme aims to introduce students the characteristic of pâtisseries and cafés, food product and operations, knowledge of food hygiene, etc. in shaping the business and achieving service excellence. The programme can provide a starting point for students' lifelong learning and develop a foundation for further studies and career development.

  • Course Structure

    Module 1: Introduction to Pâtisserie and Café Operations (15 hours)

    • Structure and scope of catering industry
    • Introduction to quality customer service

    Module 2: Pâtisserie and Café Development and Operation System (45 hours)

    • Business operation model and licensing requirements for pâtisserie and café
    • Food and nutrition
    • Menu planning for pâtisserie and café
    • Use of IT in catering operation system
    • Food and beverage costing
    • Food hygiene and safety issues
    • Occupational health and safety
    • Work ethics in food industry
    • Industrial sharing

    Module 3: Food and Beverage Service and Production in Café (44 hours)

    • Service style in café
    • Beverage production in café
    • Food production in café
    • Barista knowledge and training

    Module 4: Pâtisserie Production (44 hours)

    • Classification of pâtisserie product
    • Basic principles and ingredients for pâtisserie
    • Basic recipes
    • Production techniques of pâtisserie and application

    Module 5: Menu Design and Execution (32 hours)
    In a thematic simulation, students integrate related theories, skills and recent trends in pâtisserie and café operations, and work in a team, from designing menu items, selecting ingredients, designing service sequence and style to executing the plan.

  • Graduation Path

    Articulation to Further Studies
    Students are eligible to apply higher diploma, diploma or Yi Jin Diploma programmes of tourism and hospitality management (airline and cruise services/tourism and event management/culinary/hospitality) offered by HKCT or other institutions.

     

    Career Pathways
    Junior pastry chef, bakery chef, junior chef, restaurant waiter/waitress, barista and entrepreneurship (e.g. café, pastry shop and bakery).
